Stuffed Cucumber and Decorative Slices

This one is clever and easy to do

  1. Select a straight, well-rounded cucumber. Cut a piece from one end of the cucumber. Using the strip cutter part of the Food Decorator Tool and starting at the uncut end, make grooves down the cucumber lengthwise spacing the cuts as evenly as possible. I found that placing my index finger slightly under the round grooving hole to maintain pressure gave me nice even cuts. Slice off the uncut end of the cucumber and then, depending on the length, cut it in half to make two shorter lengths. This makes it easier to hollow and stuff.
  2. If you merely want some decorative slices, just cut 1/4-inch slices for your relish tray or score two cucumbers - one to stuff and one for decorative slices. To prepare the stuffed cucumber, go on to step 3.
  3. Using the twin curl cutter, attach the "T" handle to the top of the double ringed shaft. Insert the point of the tool into the center of the cucumber until the rings begin to cut through the seeded center. Using gentle pressure, begin turning the handle clockwise until the rings cut through the core of the cucumber. Once the rings are completely through, remove the handle and gently pull the cutter out of the vegetable. This will not create curls as it would in a hard vegetable like the beet, but does a fine job of hollowing out the cucumber. Use the melon ball scoop to remove any additional seeds and pulp.
  4. Stuff the hollowed cucumber sections with your choice of fillings or use my recipe below. Chill. When ready to serve, slice 1/4-inch pieces and use them on a relish tray, as an appetizer or on a sandwich tray.

 

Shrimp and Cream Cheese Spread

1 package light cream cheese -- 3-oz.

2 tablespoons mayonnaise

1 tablespoon celery -- minced

1/2 cup salad shrimp -- rinsed & chopped

1 tablespoon green onion -- minced

1 tablespoon green pepper -- minced

1 tablespoon pimento stuffed green olives -- minced

1 tablespoon fresh parsley -- minced

2 drops Tabasco sauce

1/8 teaspoon Worcestershire sauce

1/4 teaspoon salt

1/8 teaspoon ground pepper

In a mixing bowl, combine cream cheese and mayonnaise until smooth.

Stir in the remaining ingredients.

Stuff into cucumber, celery or serve with crackers.
